20-25 garlic cloves
Tomato – 2-3
1 inch ginger piece
8-10 – Dry whole red chillies
1 teaspoon celery
1 teaspoon fennel
1 teaspoon cumin
half teaspoon asafoetida
2 spoons desi ghee
salt as per taste

If you want, you can also use tomato to make garlic chutney full of taste, but in this recipe, we have not used tomato in this recipe to make Rajasthani garlic chutney. Step 1: Melt the chillies and make a paste.
First of all, soak it in water for 3 to 4 hours. After this, drain the water from the chillies and keep them in a plate. Now peel 100 grams of garlic thoroughly. Now grind these chillies and garlic cloves in a small jar. Make a coarse paste.
Step 2: Temper the paste
Now heat ghee in a pan, add 1 teaspoon cumin and fry it. Now add 1 teaspoon ginger paste, 1 teaspoon celery, 1 teaspoon fennel, add 1 teaspoon dry mango powder and stir well. After 2 minutes, add prepared chili in it. Add garlic paste, now add salt as per taste and fry it on slow flame.
Fry this mixture on slow flame until the ghee rises, once it is roasted well, turn off the gas and take it out in a plate.

- You can grind tomatoes and use it.

- If you want to make it less spicy, you can remove the seeds while melting the chilli, which will reduce its spiciness.
